Fry the diced leaks and spring onion together with the diced green bell pepper.

Add the red onion and tomatoes and leave to cook for 2 minutes

Add the Mushrooms top it with the garlic and hot pepper. sprinkle the paprika,black pepper and salt. Leave to cook for around 10 minutes

Serve while hot with rice.
