Ingredients

  1. 500 gmsChickpea -
  2. 1 cupClarified butter / ghee -
  3. 2-3Whole red chilli -
  4. 1 tspWhole coriander seeds -
  5. 1 tspCumin seeds / jeera seeds -
  6. 2 mediumChopped onion -
  7. 1 tspGinger garlic paste -
  8. 3-4Black pepper -
  9. 1 inch stickCinnamon -
  10. 1 pieceMace / javitri -
  11. 3 - 4Whole cloves -
  12. 4Green cardamom -
  13. 1/2 tbspAnardana / pomedranate seeds -
  14. 1/2 cupTomato paste -
  15. 1 tspChole masala powder -
  16. 1/2 tspTurmeric powder -
  17. 1 tbspChopped coriander leaves -
  18. to tasteSalt -
  19. 1 tbspBaking powder -

Steps

  1. 1

    Dry roast whole red chilli,whole coriander seeds,green cardamom,whole cloves,cumin seeds,black pepper,mace and cinnamon and lastly add anardana / pomgranate seeds.

    In a blender add all dry roasted garam masala to make a fine paste.

  3. 3

    Soak chickpea over night and add 1 tbsp of baking powder.

  4. 4

    Pressure cook with salt and 2 cup of water for 10 mins.

  5. 5

    Drain the chickpea and store the water.

  6. 6

    Heat clarified butter / ghee in a pan fry the sliced onion till brown.

  7. 7

    Add ginger garlic paste,chole masala,turmeric powder and saute for 2 - 3 mins.

  8. 8

    Add tomato paste and saute for 2 - 3 mins.

  9. 9

    Add anardana /pomegranate seeds,salt and mix well.

  10. 10

    Now add poiled chickpea and saute for 3 - 4 mins

  11. 11

    Add chickpea water.

  12. 12

    Add roasted garam masala and cook simmer for 10 mins.

  13. 13

    Garnish with coriander leaves.

  14. 14

    Serve chole with bhature.
