175 gsugar
175 gmargarine
4eggs
3 tbsmolasses
1 tspmixed spice
1 tspcinnamon
1 pclemon zest
50 gsultanas
1 tspbaking powder
1 tspvanilla essence

Weigh all the ingredients

Cream sugar and margarine together till light and fluffy

Add eggs one by one

Sieve the flour baking powder, cinnamon and mixed spice together

Fold in the flour

Add the molasses

Fold in the fruits and pour the mixture into the prepared baking tin
8

Bake in a preheated oven
9

Bake at 180°C
