  • 250 gflour
  • 175 gsugar
  • 175 gmargarine
  • 4eggs
  • 3 tbsmolasses
  • 1 tspmixed spice
  • 1 tspcinnamon
  • 1 pclemon zest
  • 50 gsultanas
  • 1 tspbaking powder
  • 1 tspvanilla essence

    Weigh all the ingredients

    Cream sugar and margarine together till light and fluffy

  3. 3

    Add eggs one by one

  4. 4

    Sieve the flour baking powder, cinnamon and mixed spice together

  5. 5

    Fold in the flour

  6. 6

    Add the molasses

  7. 7

    Fold in the fruits and pour the mixture into the prepared baking tin

  8. 8

    Bake in a preheated oven

  9. 9

    Bake at 180°C
