Ingredients

Serves 20 servings
  1. 1beef head
  2. 15guajillo chiles
  3. 7ancho chiles
  4. 1/4 cupwhite vinegar (60 ml)
  5. 15large garlic cloves
  6. 2onions
  7. 2tomatoes
  8. 1 tablespoonoregano
  9. 1 tablespoonmarjoram
  10. 1 tablespoonmixed dried herbs
  11. 1/2 tablespoonthyme
  12. 1/4 teaspoonnutmeg
  13. 1/2 teaspoonground cloves
  14. 15black peppercorns
  15. 10bay leaves
  16. 10avocado leaves
  17. Salt, to taste
  18. as neededWater,
  19. For serving:
  20. Chopped onion and cilantro
  21. Salsa of your choice for tacos, to taste

Steps

  1. 1

    Wash the cut beef head thoroughly, using a brush if needed. If there are any hairs, singe them off to remove.

  2. 2

    Place the pieces in a large steamer pot. Put the brains in a well-tied bag to keep them from falling apart during cooking.

  3. 3

    Add the bay leaves and avocado leaves. Blend the chiles with all the spices, onion, tomato, garlic, and vinegar until smooth.

  4. 4

    Pour the blended mixture into the pot and add enough water to cover the beef head pieces.

  5. 5

    Bring to a boil and cook for 4 hours, or until the meat is tender and easily separates from the bones.

  6. 6

    During this time, cook over a wood fire if possible for extra flavor. The broth will also be delicious.

  7. 7

    Serve with the broth, chopped cilantro, and onion.
