This is a lovely way to use up a ripe pineapple and get the kiddos to eat fruit and oats :-) It's quick and easy to put together and so handy when in need of a simple dessert treat for the family.

This is a lovely way to use up a ripe pineapple and get the kiddos to eat fruit and oats :-) It's quick and easy to put together and so handy when in need of a simple dessert treat for the family.
Steps

Preheat oven to 180

Grease your dish of choice with some butter. (I used an 8 inch glass pie dish)

Wash peel and cube pineapple. You will need 500gm or enough to cover the bottom of your baking dish of choice

Arrange the pineapples on the bottom of the dish
- 5
To the pineapples add 1 teaspoon of cinammon, 1 tablespoons of flour and 1 tablespoon of brown sugar and mix well to coat

In another bowl mix together the flour, oats, baking powder, remaining cinnamon, remaining brown sugar and butter. Mix together with a fork then rub with your fingers until it looks crumbly.

Add the crumbled mix on top of the pineapples and spread to cover the entire surface

Put in the preheated oven and bake for 35-45 minutes. Remove from the oven and let cool for 15 minutes if you prefer to eat it warm or cool completely if you prefer to eat it cold.

In our home some love it with a scoop of vanilla ice cream while some love it with hot custard.

Try the recipe with other fruits of your choice like apples, berries, rhubarb instead of the pineapple.
