Ingredients

  1. For Yam (Suran) Kofta
  2. 1 bowlBoiled Yam
  3. 1 cupBread Crumbs
  4. 1Onion Chopped
  5. 2Green Chillies chopped
  6. 1 tbspchopped Coriander
  7. 1 tbspCrushed Dry Fenugreek Leaves
  8. Or
  9. 1/2 cupFresh Fenugreek Leaves
  10. 1 cupCorn flour
  11. as per needSalt
  12. For Yam Crispies
  13. 1 cupThin sliced Yam
  14. as per needSalt
  15. 1 tbspCorn Flour
  16. For Coconut Curry
  17. 1 cupCoconut Slices
  18. 1 cupCoconut Milk
  19. 1/2 cupCoriander
  20. 2Onion
  21. 1 tspCumin Seeds
  22. 1Tomato
  23. 4Green Chillies
  24. 6 ClovesGarlic
  25. 1 tspSmall piece of Ginger
  26. 1/2 tbspKashmiri Red Chilli Powder
  27. 1/2 tbspHot Red Chilli Powder
  28. 1 tspTurmeric
  29. 1/2 tbspGaram Masala Powder Optional
  30. as per needSalt
  31. 1 tbspOil

Steps

  1. 1

    Lets make potato crispies first. Take Thin sliced yam and blanch it in salt water for exactly 1 minute. Take it off the water and let it get cool. Then sprinkle cornflour on it and deep fry it till it become crispy. Sprinkle some salt before serving if needed.

    Now lets make curry. For curry we need to make a paste. Slightly saute onion on pan. Do same with cumin, garlic, curry leaves and coconuts too. Then take all things in mixer. Add 1 tomato, ginger, coriander and 2-3 tbsp of water and make fine paste of it.

    Now heat oil and pour all paste in it and fry it till it gets little darker. Then add Hing, turmeric, red chilli powder and garam masala powder and mix it. Then add 1/2 cup of water and coconut cream and mix it. When it starts boiling add salt and keep simmering for few more minute.

    Now to make koftas, take all ingredients for it together except cornflour And mix it. Make small slightly flatten balls and coat it with corn flour. And deep fry it till golden brown.

    To assemble it. Pour curry at bottom, place koftas on top. Also add garnishing like onion, coriander and few drops of lemon juice. Serve it with Naan.
