Ingredients

6 servings
  • 2 cupDry quinoa
  • 2 mediumCarrots grated
  • 3 tbspRice wine vinegar
  • 1 tbspHoney
  • 3 tbspLow sodium tamari or soy sauce
  • 1 tbspGrated ginger
  • 2 tbspSesame oil
  • 1 tbspSesame seeds
  • 1/2 tspMinced garlic
  • 1/2 cupPeanut or grape seed oil

Steps

  1. 1

    Add 4 cups water to quinoa and bring to boil. Turn to medium heat and let simmer until water has absorbed. Mix all other ingredients to make the vinaigrette. Pour vinaigrette over cooked quinoa and mix well.
