Ingredients

  1. 1 bunchkale
  2. 1lemon
  3. 1/4 cupextra virgin olive oil
  4. 1kosher salt
  5. 2 tsphoney
  6. 1freshly ground black pepper
  7. 1mango
  8. 2 tbsptoasted pepitas (pumpkin seeds)

Cooking Instructions

    in a large serving bowl add kale, half of lemon juice, a drizzle of oil and a little kosher salt.

    massage until the kale starts to soften and wilt, 2 to 3 min. set aside while you make the dressing

  3. 3

    in a small bowl whisk remaining lemon juice with honey and lots of freshly ground black pepper.

    stream in 1/4 cup of oil while whisking until a dressing forms, and you like how it tastes.

    pour dressing over kale, and add mango and pepitas. toss and serve

  6. 6

    let sit overnight for more flavor
