I have a lot of random stuff in my fridge so I tend to chuck them into my curries
Steps

dice the garlic, ginger and onions

fry the mustard and cumin seeds in the oil in a saucepan until they start to crackle

add chopped garlic, ginger and onions to saucepan
- 4
add houmous and Wensleydale cheese once onions have browned slightly
- 5
chop and add tomatoes to saucepan
- 6
add all spices and mix
- 7
chop peppers and spinach
- 8
add peppers, spinach and diced Paneer and mix thoroughly

cover and let cook for approx 15-30 minutes

uncover and let heat depending on your preference of consistency (e.g. watery or dry)

serve with lettuce and sour cream or yoghurt and enjoy!
