  • 3 tbspOlive oil
  • 2 tbspred wine vinegar, Kosher salt, and black pepper
  • 6 cupWatercress, thick stems removed
  • 1/2 lbwax beans, trimmed and sliced on the bias
  • 1/4 smallred onion, thinly sliced
  • 15 1/2 ozcan chickpeas, rinsed
  • 3 ozricotta salata, crumbled
  • 1/2 cupchopped roasted almonds, Crusty bread, for serving

    Whisk together the oil, vinegar, half teaspoon salt, and 1/4 teaspoon pepper in a large bowl.

  2. 2

    Add the water cress, wax beans, onion, chickpeas, ricotta salata, and almonds and toss to combine. Serve with the bread.
