Cauliflower Cheese

This started out as an attempt to satisfy the Boss Lady's taste for cauliflower cheese, but avoiding the rock-hard, barely cooked cauly that is so fashionable these days. Don't overdo the Nutmeg until you have tried the recipe as given - it's easy to smother the other flavours!

Cooking Instructions

Otional - pre-heat oven to 200 C (400 F).

Cut the cauliflower into small florets & wash.

Boil in salted water for 10 minutes until just tender.

Drain and place in a buttered oven-proof baking dish.

Put the milk, flour and butter in a saucepan.

Apply modrate heat and whisk continually until the sauce thickens, boils and is smooth.

Add three-quarters of the grated cheese, mustard, nutmeg and seasoning to the saucepan.

Allow to simmer for a further 2 minutes, stirring well.

Pour the sauce over the cauliflower.

Mix the remaining cheese, and (optional) breadcrumbs, and sprinkle over the top.

Finish under a hot grill (broiler) until golden brown (or place in the pre-heated oven for about 15 to 25 minutes) until golden brown and bubbling.

Serve immediately as a starter or alongside your favourite dish. We enjoy it with both chicken and fish dishes.
