  1. 1 mediumGreen bell pepper, chopped
  2. 1 mediumRed bell pepper, chopped
  3. 1 mediumOnion, fine dice
  4. 2 tbspFresh jalapeño pepper, seeded and chopped
  5. 1Green Onion with tops
  6. 1 tbspSnipped fresh cilantro
  7. 1 cloveMinced Garlic
  8. 4 canSouthern-Style per-seasoned black-eyed peas, drained
  9. 1Bottom Italian Salad Dressing
  10. 14 ozJar picante salsa
  11. 1 largecorn chips or tortilla chips (Optional)

    Chop bell peppers and jalapeño pepper. Slice green Onions.

  2. 2

    Combine bell peppers, jalapeño pepper, green onion, garlic, black- eyed peas, dressing and salsa in medium bowl; mix gently. Refrigerate 1-2 hours to allow flavors to blend. Serve with corn chips, if desired. Yield 18 servings.
