  1. 10 cupfat-free chicken broth, low sodium
  2. 4 mediumred potatoes, cubed
  3. 4 cuponions, quartered
  4. 1 cupcarrots, sliced 1 inch thick
  5. 3 cupcelery, sliced 1 inch thick
  6. 2 cupzucchini, sliced 1 inch thick
  7. 8 oztomato sauce, canned
  8. 2 clovegarlic, minced
  9. 1/4 bunchparsley, chopped
  10. 1/4 bunchcilantro, chopped
  11. 1 dashblack pepper

    In a large stockpot, combine the chicken broth, potatoes, onions, carrots, and celery. Bring to a boil, reduce heat to medium-high, and simmer until the potatoes are tender, about 30 minutes.

  2. 2

    Add zucchini, tomato sauce, garlic, parsley, and cilantro. Reduce heat to medium-low and cook for 10 to 15 minutes more, or until the zucchini is just tender. Season to taste with black pepper and serve.
