  1. 1 tbspbutter
  2. 1chopped onion
  3. 1chopped garlic clove
  4. 110 oz. frozen chopped spinach, thawed, and drained
  5. 19 in. pie crust
  6. 1 tbspflour
  7. 1/2 cupgrated parmesan
  8. 1/3 cupcrumbled feta
  9. 5eggs
  10. 1/2 cupmilk
  11. 1/2 tspsalt
  12. 1/4 tsppepper
  13. 1 pinchnutmeg

  1. 1

    melt butter in a heavy med. skillet over med-high heat. add onion and garlic and saute until translucent, about 8 min. add spinach and add stir until spinach is dry, about 3 min.

    preheat oven to 375

  3. 3

    place pie crust in a 9 in. quiche dish or pie pan. press into pan, sealing any cracks. trim edges

  4. 4

    mix flour with parmesan cheese and sprinkle over bottom of crust, followed by the feta. top with spinach mixture. beat eggs, milk, salt, pepper and nutmeg in lg. bowl to blend. pour over spinach. bake about 50 min. until top is set and a knife inserted in the center comes out clean.
