Ingredients

  • 1 cupQuinoa
  • 1 tspCoconut oil
  • 2Mushrooms
  • 1Zucchini
  • 2Green onions
  • 1Garlic salt
  • 1 cupChicken stock or broth

Steps

  1. 1

    Cook quinoa in 1 cup of chicken stock/broth. Keep separate from everything else.

  2. 2

    Saute finely diced mushrooms, onions, and zucchini in coconut oil on separate small skillet.

  3. 3

    Toss sauteed veggies into quinoa, mix together, and add garlic salt. Done!
