Chicken & crouton Salad

Ingredients

  1. 3 tbspplain yoghurt
  2. 1 tspWorcester sauce
  3. 1/2 tspEnglish mustard
  4. 2anchovies finely sliced (optional)
  5. zest of one lemon
  6. 1/2lemon juice
  7. 1 tbspwhite wine vinegar
  8. 2 tbspevoo
  9. 15 gramsParmesan
  10. 1romaine lettuce, sliced
  11. 1chicory or radicchio finely sliced
  12. 1/2cauliflower v finely sliced (wafer thin)
  13. 1small red onion, finely sliced (wafer thin)
  14. 2chicken breasts (120g each) / tofu or quorn
  15. handfulrosemary leaves
  16. 1thick slice brown bread, cubed

Cooking Instructions

15 minutes
  1. 1

    Put all ingredients from yoghurt to Parmesan in large bowl and mix. Test for seasoning

    Put all salad in dressing bowl and mix

  3. 3

    Chicken on grease proof paper w salt and rosemary and bash, put in fry pan with little (anchovy) oil. 4 mins per side. at turn, add bread cubes to fry, keep toasting, even after removing chicken. Can sub tofu or quorn for chicken, just rub in rosemary and evoo first.

    Load plate w salad, slice chicken to 1cm thick and put on side, add hot croutons, one grate of Parmesan over top

I'm vegetarian & allergic to eggs, but my wife eats meat. I prepare all meals, often converting meat recipes in to vegetarian ones. Many of my recipes show measurements for both meat and vegetarian versions, often for the same meal... simply cooking a common sauce in one pan then using seperate pans for meat and veg to combine with sauce when served
