Put all ingredients from yoghurt to Parmesan in large bowl and mix. Test for seasoning

Put all salad in dressing bowl and mix

Chicken on grease proof paper w salt and rosemary and bash, put in fry pan with little (anchovy) oil. 4 mins per side. at turn, add bread cubes to fry, keep toasting, even after removing chicken. Can sub tofu or quorn for chicken, just rub in rosemary and evoo first.

Load plate w salad, slice chicken to 1cm thick and put on side, add hot croutons, one grate of Parmesan over top
