This is something that I tried a couple years ago at a family party and it went over pretty well.
Steps

Step 1. Dice up tomatoes in different sizes and add to a big bowl. 2. Devein and seed the bell peppers and then dice them and add them to bowl. 3. Devein and seed the jalapeño and Anaheim peppers finely dice and add to bowl. 4.The onion finely chop and add to mix. 5. Finely chop the garlic and cilantro. 6. When these are mixed start adding the lemon and lime juice with the vinegar. 7. Mix well and add in salt and pepper to taste finely tuning the juices and vinegar to get desired taste. 8.If you want a little sweetness to it you can add honey. This will feed about 20 people at a party.
