Ingredients

4 servings
  1. 1onion, diced
  2. 1 tbspcold extracted virgin olive oil
  3. 8 cupchicken or vegetable stock
  4. 2carrots, diced
  5. 2pieces kale, cut into small pieces
  6. 2celery stalks, diced
  7. 4chicken legs, skin on
  8. 1 tbspunrefined sea salt
  9. 1 1/2 cupbrown rice macaroni, cooked
  10. 1/2 tspdried parsley
  11. 1/2 tspdried marjoram

Cooking Instructions

    In a large saucepan, sauté onion in olive oil for 2 to 3 minutes

    Add stock, vegetables, chicken and salt to pot and bring to a boil.

  3. 3

    Cover slightly, reduce to simmer, and cook for 90 minutes

  4. 4

    Remove the chicken from the pot and place on a cutting board or plate.

  5. 5

    Separate the meat from the bone and skin, and put the meat back into the pot with the cooked macaroni and dried herbs.

    Continue to simmer for 10 to 20 minutes.
