Ingredients

4 servings
  • 1onion, diced
  • 1 tbspcold extracted virgin olive oil
  • 8 cupchicken or vegetable stock
  • 2carrots, diced
  • 2pieces kale, cut into small pieces
  • 2celery stalks, diced
  • 4chicken legs, skin on
  • 1 tbspunrefined sea salt
  • 1 1/2 cupbrown rice macaroni, cooked
  • 1/2 tspdried parsley
  • 1/2 tspdried marjoram

Steps

  1. 1

    In a large saucepan, sauté onion in olive oil for 2 to 3 minutes

  2. 2

    Add stock, vegetables, chicken and salt to pot and bring to a boil.

  3. 3

    Cover slightly, reduce to simmer, and cook for 90 minutes

  4. 4

    Remove the chicken from the pot and place on a cutting board or plate.

  5. 5

    Separate the meat from the bone and skin, and put the meat back into the pot with the cooked macaroni and dried herbs.

  6. 6

    Continue to simmer for 10 to 20 minutes.
