Mist Tortillas with cooking spray

Preheat oven to 400°F

Bake Tortillas in oven for 4-6 minutes, flipping halfway through

Slice white parts of onion; set aside

Slice green part of onions; set aside

In large skillet, cook beef over medium/high heat, breaking up with spoon till not pink

Drain fat

Stir in white part of onion, garlic, chili powder and vinegar, and salt and pepper to taste

Cook for 1 minute

Stir in tomato juice; cook, stirring often, until liquid is reduced by half and thickened

In a small bowl, stir in sour cream, lime juice and green part of onions

Place a handful of Lettuce on each plate

Top with one toasted tortilla shell and top with equal portion if Lettuce

Add beef, tomatoes and finish with sour cream mix
