Mom's Banana Cake with Caramel Icing

Ingredients

  1. 2 cupSugar
  2. 3/4 cupButter
  3. 1 1/2 cupMashed Bananas. (3 or 4 bananas)
  4. 2 largeEggs
  5. 3 cupFlour
  6. 1 tspSalt
  7. 1 1/2 tspSoda
  8. 3/4 cupButtermilk
  9. 3 tspVanilla
  10. 1 cupChopped Pecans
  11. Caramel Icing
  12. 2 cupBrown Sugar
  13. 1/2 cupEvaporated Milk
  14. 1/2 cupButter
  15. 1/4 tspSalt
  16. 1 tspVanilla

Cooking Instructions

    Cream softened butter with sugar. Add bananas and eggs. Sift flour and salt. Combine soda and buttermilk. Alternate adding flour mixture and buttermilk to banana mix. Add vanilla and chopped pecans. Pour into 9x13 greased and flour pan. Bake in 350 oven for 35-40 minutes.

    For Icing: Combine all ingredients in sauce pan. Stir over low heat until thoroughly blended. Stir over high heat until mixture boils for 1 minute. Remove from heat, beat until cold and of spreading consistency. Add the vanilla.
