Ingredients

4 servings
  • 1kilo beef diced (skirt is a good cut for long slow cooking)
  • 1 packetbutton mushrooms
  • kalamata olives (pitted) half a jar
  • 350 gmspeeled shallots (I use frozen)
  • 2carrots peeled and sliced into large chunks
  • 1 tspthyme
  • 2 tbstomato paste
  • 300 mlsred wine
  • 450 mlswater
  • 1chicken stock cube
  • 3fat cloves garlic
  • 2-3 slicessmoked bacon cup into lardons
  • 2 tbsolive oil
  • 4-5anchovies
  • salt and pepper

Steps

  1. 1

    Fry the cubed beef in the hot oil in a heavy cooking pot until browned (you might have to do this in batches).

  2. 2

    Add the mushrooms, olives, carrots, garlic, tomato paste, bacon,
    anchovies and thyme and fry for a couple of minutes.

  3. 3

    Add the stock cube, salt and pepper and wine and water. Bring to a boil.

  4. 4

    Put into the oven at 150 degrees.

  5. 5

    After an hour and a half add onions and return pan to oven for a further half an hour.

  6. 6

    Serve with mashed potatoes.
