Ingredients

12 servings
  • 2eggs
  • 150 gramssugar
  • 125curd cheese (try Eastern European shops or Polish section in Tesco) or Ricotta
  • 75 mlkefir
  • 60 gramsmelted butter (let it cool down)
  • 175 gramsdiced rhubarb
  • 100 gramsflour
  • 2 teaspoonsbaking powder
  • 60 gramscorn flour
  • Tiny bit of vanilla extract (optional)

Steps

    Preheat the oven to 200C

    Whisk eggs and sugar

  3. 3

    Mix curd cheese, kefir and melted butter

  4. 4

    Mix the dry ingredients

  5. 5

    Fold together all ingredients. Batter should be lumpy, so don't overmix.

    Spoon the mixture into a lined muffin tin. Bake for 20-25 minutes until golden on top.
