Ingredients

  • 1/4 cupSoy Sauce
  • 2 tbspSherry
  • 1 tspGarlic, Minced
  • 10Green Onions, 1 Inch Pieces
  • 1 1/2 lbFlank Steak
  • 1/4 lbFine Egg Noodles
  • 4 tbspVegetable Oil
  • 2Carrots, 2 Inch Julienne Strips
  • 1/4 lbMushrooms, Sliced
  • 1/4 cupBamboo Shoots
  • 6 ozFrozen Snow Peas, Thawed
  • 2 tspCornstarch

Steps

  1. 1

    Mix soy sauce, sherry, garlic, and green onions.

  2. 2

    Slice the steak thin, diagonally across the grain.

  3. 3

    Toss meat in marinade; cover and chill at least 1 hour. Turn occasionally.

  4. 4

    Strain meat, save marinade but separate onions.

  5. 5

    Start cooking noodles.

  6. 6

    Heat 2 tbs. oil in wok or large skillet.

  7. 7

    Add meat and stir-fry about 5 minutes. Remove meat and juices. Add juices to the marinade.

  8. 8

    Add remaining oil; stir-fry green onions and carrots for 3 minutes; add mushrooms and bamboo shoots and stir-fry 2 minutes longer.

  9. 9

    Reduce heat to moderate low; add peas and meat and stir-fry 2 minutes.

  10. 10

    Mix juices, marinade and cornstarch; add to wok with drained noodles. Cook 1 minute.
