Dissolve yeast in warm water about 10 minutes, until creamy.

Beat the yeast mixture with the eggs, pineapple juice, water, sugar, ginger, vanilla, and melted butter. Gradually add the flour until a stiff batter is formed. Let rise for 1 hour.

Punch down the dough and divide into 3 round loaves. Place on a greased cake pan and allow to rise until doubled.

Bake at 350' for 25-30 minutes.
