Steps

peel papaya and cut in half

scoop out the seeds and cit into large chunks

peel and chop onion

peel the garlic and ginger, and mince both

combine all ingredients in large saucepan and bring to a boil.

lower heat and simmer, stirring occasionally,until the onion is tender, about 15 minutes.

cool to room temp.

remove the cinnamon stick and puree in food processor or blender until smooth.

sauce may be used immediately or refrigerated up to 2 weeks.
