Ingredients

  2. 8 ozPortobello mushroom
  3. 3 mediumRed peppers
  4. 1 headGarlic
  5. 2 largeEggplant
  6. 2 largeZucchini
  7. 1 canHunts crushed tomatoes, basil
  8. 1 largeEgg
  9. 8 ozRicotta cheese
  10. 4 ozMozzerlla
  11. 1/2 bunchParsley fresh
  12. 1/2 bunchBasil fresh

Cooking Instructions

    Slice eggplant and zucchini, salt and toss on grill. Mix ricotta, mozzarella, parsley, and egg in a bowl and set aside. Dice, toss, salt and pepper the onion, red pepper, and garlic in a pan and sauté, add mushrooms after a few minutes. After a few more minutes add tomatoes and let simmer, adding in basil a couple of minutes before finish. Layer you baking pan eggplant, sauce, eggplant, cheese mixture, zucchini, sauce and bake for 20-30 minutes at 350
