For this rep your state challenge, I'll be repping Delta State. I'm originally from Imo state but as someone who spent all her childhood in Warri, Delta State, I think I'm more than qualified to rep Delta.

And I have chosen my favourite soup of all time - Banga soup!!! Banga soup is a type of palm fruit soup native to the Deltans of Southern Nigeria. It's traditionally served with starch but you can serve it with any swallow of your choice.

Ingredients

  • 1 kgPalm fruits (banga)
  • 500 gmeat (assorted meat or chicken)
  • 1large sized fresh catfish
  • Prawns (optional)
  • 1-2 cupsperiwinkles
  • 1medium onion
  • 1/2 cupcrayfish
  • 6-8scotch bonnet chillies
  • 1 tbspataiko
  • 1 tspirugege
  • 1obonrubebe stick
  • 1 handfuldried Beletientien leaves
  • 1/2 handfuldried and crushed bitterleaf
  • 4Seasoning cubes
  • Salt

Steps

  1. 1

    Wash your meat with warm water and salt
    Wash your fish with warm water and lime juice to get rid of the sliminess
    Cook your Banga and extract the juice
    Grind your crayfish together with the ataiko and irugege.
    Blend your pepper
    Chop your onions

  2. 2

    Precook your meat with the chopped onion, 2 Seasoning cubes and salt. Cook till the meat is almost done and the water is almost dried up.

  3. 3

    Pour your palm fruit extract into a pot and boil for about 15mins or until it starts to thicken. Add your ground spice mix (crayfish, irugege and ataiko) and obonrubebe stick and cook for a few more minutes.

  4. 4

    When the soup has thickened considerably, add your precooked meat, fresh fish, blended chillies, 2 seasoning cubes and salt. Cook till the fish is done, your meat should also be done by now.

  5. 5

    Add your Beletientien leaves and bitterleaf, taste for Seasoning and adjust to suit your taste; simmer for 2-3 minutes. Turn off the heat and serve with your favourite swallow.
