Ingredients

  1. 1 cupcooked jasmine rice, chilled (about 150 grams)
  2. 1fried mackerel (pla too), bones removed
  3. 1large egg
  4. 1-2 tablespoonsoil
  5. 5Thai bird’s eye chilies, sliced (adjust to taste)
  6. 3shallots, thinly sliced
  7. 1 stalklemongrass, thinly sliced
  8. 2kaffir lime leaves, thinly sliced
  9. 1 stalkeach green onion and cilantro, chopped
  10. 1 tablespoonfish sauce
  11. 1/4 teaspooneach sugar and ground black pepper (adjust to taste)
  12. 1cucumber
  13. 1wedge lime

Steps

  1. 1

    Remove the bones from the fried mackerel and flake the meat. Thinly slice the lemongrass, shallots, chilies, kaffir lime leaves, green onion, and cilantro. Prepare the chilled rice and egg.

    Heat oil in a skillet or wok. Add the lemongrass, shallots, and chilies, and stir-fry until fragrant. Add the mackerel and stir-fry to combine. Add the egg and stir until just set. Add the rice and stir-fry over high heat until the rice is hot and separated.

    Season with fish sauce, sugar, and black pepper. Stir to combine. Add the sliced kaffir lime leaves, green onion, and cilantro, and stir just until mixed. Remove from heat.

    Serve on a plate with cucumber slices and a wedge of lime.
