Ingredients

1Put 4 tablespoons butter 2 tablespoons curry 2 tablespoons flour into a2 quart size saucepan cook together 3 to 5 minutes
2Add. 3 cloves garlic, minced. 2 large onions, sliced. 2 to 3 inch piece ginger root, sliced
3Cook. 1/2 hour over low heat. Stir frequently.
4Add. 1 quart frozen coconut milk.
5Cook. 3 hours over water
6Mash. Ingredients through colander or wide mashed strainer.
7Discard. Onions and ginger. Mixture will have consistency of thick cream.
8Add. Salt to taste before serving.
9Add 1 cup fresh cream before serving.
10Add. 2-3 pounds boiled shrimp, 15 minutes before serving.

Condiments: Chopped hard boiled eggs, minced green onions, freshly grated coconut, mango chutney, raisins, chopped peanuts, chopped crisp bacon, sliced ripe bananas.
