Ingredients

  1. 1Put 4 tablespoons butter 2 tablespoons curry 2 tablespoons flour into a2 quart size saucepan cook together 3 to 5 minutes
  2. 2Add. 3 cloves garlic, minced. 2 large onions, sliced. 2 to 3 inch piece ginger root, sliced
  3. 3Cook. 1/2 hour over low heat. Stir frequently.
  4. 4Add. 1 quart frozen coconut milk.
  5. 5Cook. 3 hours over water
  6. 6Mash. Ingredients through colander or wide mashed strainer.
  7. 7Discard. Onions and ginger. Mixture will have consistency of thick cream.
  8. 8Add. Salt to taste before serving.
  9. 9Add 1 cup fresh cream before serving.
  10. 10Add. 2-3 pounds boiled shrimp, 15 minutes before serving.

    Condiments: Chopped hard boiled eggs, minced green onions, freshly grated coconut, mango chutney, raisins, chopped peanuts, chopped crisp bacon, sliced ripe bananas.
