Black Bean Vegan Quesadillas

Ingredients

  1. 4Tortillas
  2. 1 canCanned black beans, low sodium, drained
  3. 1 cupMonterey cheese, shredded
  4. 2 cupSalsa

Cooking Instructions

    Combine beans, cheese, and 1/4 cup salsa in a medium bowl

  2. 2

    Place tortillas on a work surface and spread 1/2 cup of filling in half of each tortilla. Then fold tortillas and half and press gently to flatten

  3. 3

    Microwave approx. 45 seconds to 1 minute 15 seconds (depending on your microwave)

    Serve with remaining salsa
