Toast and soak the ancho and guajillo chiles.

Blend the chiles with the peppercorns, cloves, cumin seeds, oregano, cinnamon stick, garlic, and salt.

Strain the chile mixture to remove the skins, then fry it in a skillet with lard or vegetable oil.

Once the sauce is fried, add the chicken pieces, coating them well in the sauce. Add the 4 avocado leaves. Taste and adjust salt if needed.

Cover and cook over medium heat for about 1 hour, until the chicken is cooked through.

Once cooked, serve with rice or beans. Enjoy!
