Avocado Sandwich inspired by Ruben

Long ago I was on break with a co-worker named Ruben. I was drinking some sports drink and he took out a couple of slices of bread. He then took out some salt and a lime. I said what on earth are you going to eat a lime sandwich. He went to break room refrigerator and took out a ziploc bag filled with mayonnaise and took out an avocado. He made his sandwich.
Well I just found out my good cholesterol is low and my bad cholesterol is good. So I was suggested to eat avocados. Here is one way I like them. Thank Ruben!

Steps
- 1
Split the avocado in half remove the seed. Lay out the bread slices. Slice the two halves of the avocado top to bottom only don't cut the shell.
- 2
Scoop out the meat of the avocado add to the bread and sprinkle with lemon juice and salt.
- 3
Stack and serve. I hope you enjoy!
- 4
I have seen these eaten with mayonnaise, butter, or sour cream, spread on the bread slices.
