Grind all the spices listed above except the green chili peppers, 1 teaspoon cumin seeds, and mustard seeds.

Set aside 2 tablespoons of the ground spice mixture.

Wash the chili peppers thoroughly.

Pat the chili peppers dry with a cotton cloth.

Make a slit down the center of each chili pepper with a knife.

Stuff the reserved spice mixture into the chili peppers.

Heat a griddle and add a little oil.

Place the stuffed chili peppers on the griddle and roast on low heat for 5 minutes, then remove.

Heat a pan and add oil. Once the oil is hot, add the mustard seeds and cumin seeds.

When the cumin seeds start to turn golden, add the green chili peppers and sauté.

Add the remaining ground spice mixture and sauté on low heat for 5 minutes.

Add salt to taste.

Add the stuffed chili peppers.

Add water as needed.

Cover with a lid.

Cook on low heat for 10 minutes.

Turn off the heat.

Serve hot with rice.
