Boiled Rice With Veggies Curry
By Now anyone who follows my recipes will realise am not really a fan of meat, I reserve it for special Occasions. Here's a delicious recipe for Veggies Curry.
Cooking Instructions

Add oil into a medium sized pan, let it heat up then add the onions and let them brown into a nice golden colour.

Add the Soya Chunks, and stir until well integrated with oil stirring constantly so it doesn't burn. Do this until it has a nice brown colour.

Add the cubed potatoes and stir until mixed properly.

Crush Garlic, coriander and Green chillies if using when it forms a paste add a little water n pour into the pan and stir well. Cover for a while then open and stir

Add the grated tomatoes, stir until well mixed then cover for a few minutes 2-3 mins is enough. Open the lid add the green bell pepper and Curry Powder and stir until well mixed. Cover for another few minutes.

Open, stir and add water gradually until you reach your desired stew size. But not to much water.

Leave it to boil stirring occasionally until the potatoes are tender and the curry is thick.

Serve with Cooked boiled rice.
