It is a Bengali style sweet polau with a strong aroma of gobindobhog rice, ghee and some green peas.

It is a Bengali style sweet polau with a strong aroma of gobindobhog rice, ghee and some green peas.
Steps

Rinse the rice and make it dry.

Add 1tablespoon ghee, turmeric, garam masala powder, salt and sugar, ginger paste in the rice and mix it very well. Keep it aside upto 20min.

Heat 2tablespoon ghee in a wok, and then add the cinnamon, cardamom and cloves. Saute it till the aroma comes out.

Add the bayleaf and the dry red chilli and saute till the aroma comes out.

Add the green peas and 1/4 teaspoon salt. Saute it in a medium flame. Cook it untill the water from the peas dissapears.

Add the cashews and raisins and saute it all together.

Add the rice and mix it altogether. Saute it till the aroma of the rice comes out and the rice seems to be fried well.

Add the lukewarm water in it. The quantity of the lukewarm water should be double the quantity of the rice. For instance if you are cooking 1cup of rice then add 2cups of water.

Mix it very well. Then cover the wok with a lid and keep it in a medium flame. Saute it in between (in 5min interval).

After 10min, keep it in a low flame.

Keep it for 5min and switch off the flame. Keep it undisturbed, don't uncover it.

After 2min, uncover the wok and serve hot.
