Ingredients

  1. 2 cupBoiled rice or idli rice ground in mixie) and 3 cups (if ground in wet grinder)
  2. 1 cupBlack lentils (urad dal)
  3. to tasteSalt
  4. Ingredients for beetroot, carrot, spinach idli
  5. 2 tbspBeetroot grated
  6. 2 tbspCarrot grated
  7. 1/2 cupSpinach
  8. 2Green chillies
  9. 1 inchGinger
  10. 1/4 cupCoriander leaves
  11. to tasteSalt

Cooking Instructions

    Method:
    1.Soak rice and black lentils for 5 - 6 hours and grind it to a slightly coarse texture.
    2..Add salt and ferment it till the batter rise.
    3.Grind spinach, green chillies,coriander leaves with little salt and keep aside.
    4.Take about 2 tbsp idli batter and and add grated carrots.to make the carrot idli and stir it.
    5.Take another 2 tbsp of batter and add grated beetroot and stir it.
    6 Take another 2 tbsp of batter and add 2 tbsp of ground spinach.

    And stir it.

    7. Grease the idli plates and the insides of the small steel cups with little oil.
    8 Place small steel cups in the centre of the idli plate. to make the cup / hat shape of the idlis
    9. Pour 1/4 of the plate with plain idli batter and fill each of the the mini cups one with the beetroot batter, another with spinach batter, and the thiird with carrot batter, and gently place them in the cooker.
    10. Steam cook in cooker for about 10 minutes.

    11. Remove the idli from the mini cups carefully and place it in the center of the ring of the idli to form a cup.
    12. Add a peeled carrot to form the handle of the cup idli.
    13. Invert the mini idlis and place on the ring shape idli to form the hat idli and decorate with coriander leaves and peeled carrots.
    14. Enjoy with chutney.
