Steps

Cook the spinach.

Chop onions, tomato and chili (you can reduce or add green chilis as you prefer)

Fry garlic and onion till soft (don't let it get brown) in 2tbsp cooking oil and add green chilli and tomato.

Blend the fried mix and cooked spinach till smooth.

In a Sauce pan or bigger vessel, add 1 tbsp oil. Fry the diced Cottage cheese in it for 30secs (in low flame). Add spinach and spice blend to the pan.

Let is simmer and cook. Turn off the flame when the gravy seems cooked. (note: The gravy is to be a bit liquid. Just after it cooks turn off stove. Don't let the gravy reduce by more than 1/4th).

Tip: You can close the lid and let it simmer for two mins extra (when you find it cooked). This makes the cheese even more softer.
