I wanted something quick and easy to pull together that also incorporated one of my favorite things - oysters. This recipe sounds funky, but I love it. If you like canned sardines (which I happen to also like a lot) - you could use that too.

3 ozedamame noodles
pinchgarlic salt
2 tbspolive oil, extra virgin
parmesan cheese
pine nuts
scallions
1 cansmoked oysters

Boil then simmer edamame noodles for 6 mins.

Add can of oysters, pine nuts, and olive oil. Add parmesan cheese and mix well.

Top with sliced scallions and pine nuts. Season with a pinch of garlic salt.
