Pulse the kunafa pastry in a food processor until it’s slightly coarse. Place it in a large bowl, add the melted butter, and rub together well to evenly coat the pastry.

Add the kunafa coloring, mix well, then spread the mixture in a buttered baking pan. Press down firmly to compact the pastry.

Crumble the cheese and spread it evenly over the kunafa, leaving a border around the edges. Bake in a preheated oven at medium heat until the cheese is fully melted and the kunafa is set.

Remove from the oven, invert onto a larger tray, and pour the cold simple syrup over the top. Garnish with pistachios and serve.
