Marinate the chicken overnight with vinegar, curd and mustard oil

Cut the onions, tomato and garlic into fine and small pieces

Heat a pan and add some oil into it. Add the cinnamon, cardamom,cumin seeds and bayleaf into it

Add the chicken pieces into this with salt and fry till it's golden brown.Remove and keep aside

Add some butter into the remaining oil and saute the onion, ginger, garlic and tomato. Remove and let it cool and then make a paste of it

Add some oil into a pan and add this masala, salt and saute it for a while. Add the chicken into it and mix it well

Add some warm water into this and let it cook covered in low flame. Cook till the chicken softens

Add water based on how much gravy you need. Once the chicken is cooked,add Garam masala and remove

Chicken dum masala is ready to be served with Rice or Paratha
