Steps

Wash and cut bittergourds

Cut onions and tomatoes

Heat oil in a pan and season with mustard and jeera. Add onion and tomato and sautee them

Now add bittergourd pieces and add salt.

Once it is half cooked, add tamarind water(thick consistency) and let bittergourd cook in it.

Check salt and add chilli Powder as soon as bitter gourd is completely cooked. Add curry leaves.

Before switching off the stove, add grated jaggery, mix well and cover the lid. Switch off the stove.

Ready to serve
