First deep fry the brinjal and keep aside, make a fine paste of onions,and sesame peanut and coconut keep this aside

To prepare the gravy in a pan add oil after heating up the oil add cumin seeds add onion paste let it fry until golden brown later add tomato paste stir well add turmeric powder ginger garlic paste and cook until the pan leaves the oil now add the chilli powder salt and add the paste and stir well in a low flame fry for 2-3min

Later add the tamarind juice add 2 glasses of water let this cook well in a high flame add green chillies and fried brinjal add garam masala powder and cook it for 15min in a high flame stir in between cover with lid on top

Later cook it in a low flame until the pan leaving the oil make sure it is formed thick gravy add the mint and coriander leaves that’s it your done to taste the blissful bagara baingan🍆
