Kesariya meethe chawal or Sweet saffron rice is a very traditional dessert made on the auspicious occasion of Basant panchami, every year. This delicious and aromatic sweet saffron rice is first offered to goddess Saraswati (the goddess of knowledge) and then to all family members as prasad.

The final result of the rigorous boiling, cooking and mixing is a rich dessert that is loaded with aromatic ingredients such as cardamom with a mouth watering flavour playing peek-a-boo with your sweet taste buds.

Ingredients

4 servings
  • 1/4 teaspoonsaffron (kesar) strands
  • 1 cupbasmati rice
  • 1 tablespoonghee
  • 2cardamoms powdered
  • 1 tablespoonmilk
  • 1 cuppowdered sugar
  • 2 pinchesturmeric powder
  • 1/5th teaspoon Cinnamon powder
  • 1/4th cup chopped pistachios and cashews
  • 1 teaspoonchironji/chiroli
  • 1 tablespoonraisins /kismis

Steps

25 minutes
  1. 1

    Dip the saffron strands in the warm milk and keep aside.

    Clean, wash and soak the rice for 15 minutes, par boil the rice and strain.

    Heat ghee in a big pan, and roast all dry fruits for a minute.

    Add boiled rice, cinnamon powder, turmeric powder, all dry fruits, cardamom powder and mix well.

    Add sugar and turn the rice upside down carefully so they don't break.

    Add kesar milk and mix well

    Garnish with dry fruits and serve hot
