I just love the pop of colours from the vegetables which makes a lot of difference from the normal Party Jollof.
This was cooked in large quantity but the recipe below is for small quantity for easier understanding.

Party Jollof rice entails the use of plenty and different spices to get that flavour. I have worked hand in hand with my caterer aunty in Warri to know that. A lot of spices and seasoning goes into the pot. And the heat from fire wood gives the aroma from party Jollof.
But the major spices and ingredients that plays out are
Tim tomatoes paste
Thyme
Enough onions
Ginger
Knorr seasoning cubes
Red plum tomatoes, shobo, tatashe, parboiled .

Ingredients

5servings
  1. 10ripe fresh tomatoes
  2. 4 cupsrice
  3. Chicken
  4. fresh atarodo peppers
  5. Other red peppers for pop of colour
  6. I small medium size canned tomatoes
  7. Dried and fried shallots
  8. Dried and fresh sliced onions
  9. Fresh ginger blended with the liquid sieved
  10. Thyme
  11. Curry
  12. Bay leaves (few)
  13. Knorr seasoning
  14. Chicken stock
  15. 150 gramsmagarine
  16. Green peas
  17. Diced carrots
  18. Chopped green beans
  19. Vegetable oil for frying

Steps

    Wash the fresh tomatoes and pepper mix with fresh onions and blend to a smooth paste. Parboil until the tomatoes get to a thick paste consistency but not burnt..

    Boil the meats using thyme, bay leaves, curry, seasoning cubes, parts of the fried and dried shallots, dried and fresh onions to parboil it. Taste for salt and adjust to taste

    When the chicken is done drop from heat.separate the chicken from the stock. Sieve the stock and set aside

  4. 4

    Wash the raw rice with hot water, sieve and set aside.

  5. 5

    Place pot on heat and add vegetable oil. Drop some fresh onions inside the oil when it's hot enough.

    Fry the meat in batches and set aside..

  7. 7

    Place a pot on heat, add 3cooking spoon of vegetable oil from the oil use in frying the meats, allow to get hot. Sauté onion for some seconds.

    Open the can tomatoes paste and fry in the hot oil, turning constantly to avoid burning.

    Add the parboiled fresh tomatoes and pepper mix.

  10. 10

    Add your chicken stock and add water enough to cook the rice.

    Add curry, bay leaves, thyme, seasoning cubes, dried onions, dried and fried shallots and other available spices to the Pepper mix..

    Please season the tomatoes pepper mix very well, to have tasty Jollof rice..

    Taste for accuracy and more seasoning

  14. 14

    Cover to boil, when it's starts boiling, add your washed rice to it

  15. 15

    Stir with a wooden spatula and cover to cook.

  16. 16

    Check after some minutes, add the magarine on top of the rice on heat. You can also add the magarine before frying the pepper..

    Turn the rice with the wooden spatula to allow penetration of the tomato mix into every parts of the rice.

    Even if it's burning a little, don't fret. That smoky flavour is why it's called party Jollof rice..

    Garnish the top of the Jollof rice with fresh sliced onions

    If not properly cooked to your liking, cover with foil paper to entrap heat for some minutes and get it cooked fully..

    Drop from heat..

    For the vegetables, parboil the peas for some minutes to get them softened.

    Place frying pan on heat and add little vegetable oil.

    Sauté little onions, add curry and thyme.

  25. 25

    Add all the vegetables and allow to cook for some few minutes.

    Add seasoning cubes, taste for salt.

    Drop from heat.

    Mix the vegetables with the already cooked Jollof rice.

    Mix thoroughly to combine

    Serve with fried meats...
