Ingredients

10to12 servings
  1. For Tacos--
  2. 1/2 cupmaize flour (makki ka aata)
  3. 1/4 cupwheat flour
  4. 1 tspcarom seeds (ajwain)
  5. 1 tspsalt
  6. 1 tbspoil
  7. as neededOil for frying tacos (Rice bran oil)
  8. For Black eyed bean topping---
  9. 1 bowlsoaked black eyed bean(atleast for 1an)hour and cooked
  10. 1 tbspoil
  11. 2tomatoes (puri)
  12. 2dry red chilli
  13. 7-8garlic cloves
  14. 1/2 inchginger
  15. 1/2 tspturmeric powder
  16. 1/2 tspchanamasala
  17. 1 tspcumin seeds
  18. to tasteSalt
  19. leavesFresh coriander
  20. For uncooked salsa--
  21. 1/2 cupfinely chopped onion
  22. 1/2 cupfinely chopped tomatoes
  23. 1/2 cupshredded cabbage
  24. as neededFresh coriander leaves
  25. 1/2 tspblack pepper powder
  26. 1/2 tspchat masala
  27. 1 tspmixed herbs or oragano

Steps

  1. 1

    Making Tacos---sieve the maize flour and wheat flour together in a bowl.

    Add oil, carom seeds, salt and knead into a semi stiff dough using warm water.

    Take small size of (puri size) portion from this dough..Dust with wheat flour and roll it with rolling pin.

    Prick with fork.

    Heat a deep pan or kadhai and deep fry till it turns light brown in colour from both sides.

    Once it turns light brown... Immediately shape it into a shell(U shape) using a pair of tongs and a frying laddle and continue deep frying by holding the shell till it turns golden brown in colour from both sides.

    Drain it on an absorbent paper.

    Now for making tangy masala---first in a blender jar add tomatoes,dry red chilli, ginger, garlic..And blend them to make a puri.

    Heat a pan with 1tbsp oil and add carom seeds..Add tomato puri and saute for 2 min.

    Add turmeric powder,chana masala and salt...Mix well and cook on a medium flame for 2min.keep stirring.

    Add black eyed beans... mix well...Mash it lightly and cook on a medium flame for another 2to 3 min.switch off the flame add coriander leaves and keep aside.

    Making uncooked salsa---combine all the ingredients in a bowl...And mix well.

    At last proceeding--- fill a Taco shell with 1tbsp of beans mixture topping..Then 1/2tbsp of uncooked salsa. And arrange with some shredded beetroot..

    Serve immediately.
