I saw the idea in a recipe, to roast chicken with lemon pieces, and made this instead as I wanted a dryer roast. (The frozen fruit pieces I was saving to drop into summer drinks instead of ice...)

I saw the idea in a recipe, to roast chicken with lemon pieces, and made this instead as I wanted a dryer roast. (The frozen fruit pieces I was saving to drop into summer drinks instead of ice...)

Slice the Chicken breast almost the way through across the width of the meat.

Scatter the frozen Lime and Orange wedges on the bottom of an oven tray, setting aside any frozen juice.

Place the chicken on top of the wedges, Drizzle with lemon juice and soy sauce. Sprinkle with any frozen fruit juice.

Cook gently in middle of medium oven for about 30-40 minutes depending of thickness of the chicken, until brown and smelling gorgeous! Eat while hot, or keep for lunchboxes when cold! Enjoy!
