Cut the breasts into large pieces bite size add and coat the chicken in the marinade for 2 hours. Add the olive oil to heat up. Fry on medium with olive oil until cooked but not too brown.

Let it cool down and cover until your ready to make the salad when its cool add the spring onion

Cut up all the salad ingredients and add to a serving plate however you like it placed.

DRESSING add the mint to the yougurt and mix through,add it to a bowl with a small spoon

Serve with Tongs so as your dinner guests can help themselves.
