Cut the onions long and thin. This enhances taste and crispness. Then cut green chilies into very small pieces.

Take a large bowl & mix- chopped onions, besan, makkai flour, chopped chilies, salt, turmeric, red chilli powder, ajwain, pinch of sugar and finely chopped fresh coriander leaves. Mix well, preferably with hands. Keep aside this mixture for 15 min.. This will let the mixture of salt & onion to release water.

Meanwhile, heat oil in a Kadhai/ fry pan. Take the mixture, and mix well once again. If required, put one tablespoon or little more water (as required). Now put the mixture into the hot oil in small- small portions. fry on medium flame. Serve hot with tomato ketchup/ your favorite chutney.
