Ingredients

  1. 1 tspgrated Jaggery
  2. 2 tbspOil
  3. 2 sprigCurry Leaves
  4. 2-3 tbspchopped Coriander leaves
  5. 2Green Chillies slit
  6. 2chopped Tomatoes
  7. 2-3 tbspTamarind pulp
  8. 1 tspTurmeric
  9. 8-10sambar Onions peeled
  10. to tasteSalt
  11. For pressure cooker:
  12. 1 cupToor Dal
  13. 3 cupsWater
  14. 1 tspTurmeric
  15. For Sambar Masala:
  16. 6-8dry red chillies
  17. 1 tspFenugreek Seeds
  18. 4 tbspgrated Coconut
  19. 5 tbspcoriander seeds
  20. 1.5 tspCumin seeds
  21. 2 tbspchana Dal
  22. 2 tbspurad Dal
  23. 1 tbspOil
  24. Vegetables:
  25. 1Potato cubed
  26. 1Carrot cubed
  27. 5-6beans chopped
  28. 1/2 cupyellow Cucumber cubed
  29. 2-3small brinjals chopped
  30. 1/2 cupladies finger chopped
  31. 1 cupcubed Pumpkin
  32. For Seasoning
  33. 2 tbspGhee
  34. 1 tspMustard Seeds
  35. 1 tspHing
  36. 2dry red chillies
  37. 1 tspurad Dal
  38. 1/2 tspCumin seeds
  39. 1 sprigCurry Leaves

Steps

    Pressure cook dal with water and turmeric until completely soft. Mash dal. Keep aside

  2. 2

    In a pan, heat oil and roast all spices and coconut as mentioned under sambar masala section until brown. Allow to cool completely. Add sufficient water and grind to form paste. Keep aside

  3. 3

    In a separate big pan, heat 2 tbsp oil, fry onions, curry leaves,green chilies. Add tomatoes and fry. Add all veggies, turmeric and roast for 5 minutes until raw smell goes away. Add salt, water, cover and cook for 10 minutes until veggies are tender. Add the ground paste to veggies. Mix well

    Add tamarind pulp, dal and jaggery. Mix well. Now simmer and allow to cook for 15 minutes

    Now heat ghee and splutter mustard seeds. Add urad dal, jeera,hing, dry red chillies. Once urad dal browns, add curry leaves. Switch off

  6. 6

    Add seasoning to sambar. Mix well. Add coriander leaves. Serve hot with rice, dosa, idli Vada etc
