Ingredients

6 servings
  1. 2 poundsmedium shrimp (save shells)
  2. EVOO
  3. 1 poundandouille sausage, cut into rounds
  4. 2green peppers
  5. 3 stalkscelery diced
  6. 1onion diced
  7. salt
  8. Pinchcrushed red pepper
  9. 3 clovesgarlic chopped
  10. 1 can (28 ounce)diced tomatoes
  11. 1 teaspooncayenne pepper
  12. 2 cupsrice
  13. 2bay leaves
  14. 1 bundlefresh thyme
  15. 5scallions (opt garnish)

Steps

  1. 1

    Make shrimp stock using shells and water. Bring to a boil, turn off let sit 15-20 mins

  2. 2

    Heat oil in large pot

  3. 3

    Brown sausage 4-5 mins

  4. 4

    Add peppers, onions, celery, season w/ salt and red pepper cook 7-8 mins add garlic cook 2-3 mins

  5. 5

    Add tomatoes, cayenne, rice, 4 ci[s shrimp stock, thyme, bay leaves, Bring to a boil, reduce to simmer and cook 25 mins

  6. 6

    Stir in shrimp cook 5-7 mins

  7. 7

    garnish with scallions
